7 Grocery Store Vegetables You Can Regrow Again and Again

Posted on May 27, 2025 by thegardenbeds

Ever tossed out veggie scraps thinking they were useless? Think again. Some of the most common grocery store vegetables can actually be regrown at home—saving you money and cutting down on waste. And guess what? You don’t even need a garden. A sunny windowsill, a jar of water, and a little patience are all it takes.

Here are 7 grocery store vegetables you can regrow again and again, straight from kitchen scraps!

1. Green Onions (Scallions)

Why they’re amazing: These guys bounce back fast—seriously, almost overnight.

How to regrow:

  • Save the white bulbs with roots attached.

  • Pop them in a glass of water, root-side down.

  • Set the glass on a sunny windowsill and change the water every 2–3 days.

  • In about 5–7 days, you’ll see fresh green shoots ready to snip and use.

Pro tip: For a never-ending supply, plant them in a pot after a couple of regrowth cycles in water.

2. Romaine Lettuce

Fresh salad from scraps? Yes, please.

How to regrow:

  • Keep the base of the head (about 2 inches).

  • Stand it in a shallow bowl of water with the cut side facing up.

  • Place it in a bright spot and refresh the water every couple of days.

  • Within a week, new leaves will sprout from the center.

Want bigger leaves? Move it to soil once roots appear.

3. Celery

Celery is a regrowth champ—don’t let that bottom piece go to waste.

How to regrow:

  • Chop off the base (around 2 inches).

  • Place it in a bowl with a little water.

  • Put the bowl in a sunny spot and mist the top lightly every day.

  • New stalks and leaves will sprout from the middle in about 5–7 days.

Once roots appear, plant it in soil for full growth. You’ll have crisp celery again in no time.

4. Garlic

One clove turns into a full bulb. It’s garlic magic.

How to regrow:

  • Choose a large, healthy clove (don’t peel it).

  • Plant it pointy side up in a pot of soil.

  • Keep it in a sunny area and water regularly.

  • Over time, it’ll sprout into a whole new bulb beneath the soil.

Bonus: You can also snip the green shoots (called garlic scapes) and use them like chives.

5. Carrot Tops

No, you won’t grow full carrots, but the leafy tops? Totally regrow-able—and useful.

How to regrow:

  • Cut off the top inch of a carrot.

  • Place it in a shallow dish of water with the cut side down.

  • Set it in sunlight and change the water regularly.

You’ll get feathery greens perfect for garnishes, soups, or even homemade pesto.

6. Leeks

Leeks regrow just like green onions—easy and low-effort.

How to regrow:

  • Save the root end (1–2 inches).

  • Place it in a glass of water with the roots down.

  • Put it in a sunny window and replace the water every few days.

  • Watch new stalks grow within a week.

Just keep trimming what you need. The regrowth continues.

7. Basil

Bought a bunch of basil for pasta night? Don’t throw out the stems!

How to regrow:

  • Choose stems about 4–5 inches long with several healthy leaves.

  • Strip the leaves from the bottom half and place the cut ends in a jar of water.

  • Keep it in a warm, bright spot, but out of direct sun.

  • Once roots grow (usually in 7–10 days), transplant them into a pot of soil.

Keep harvesting the leaves, and it’ll keep producing. Just don’t let it flower!

Quick Tips for Success

  • Sunlight is key: Most of these veggies love sunlight. A bright windowsill works wonders.

  • Change the water: For water-based regrowth, freshen up every 2–3 days to prevent rot.

  • Patience pays off: Some veggies sprout fast, others take a bit. Don’t give up too soon!

  • Move to soil for better yield: While many will grow in water for a while, transitioning to soil helps them thrive long-term.

Why Regrow Veggies?

Aside from saving money and reducing waste, there’s just something fun about growing food from scraps. It’s a great activity for kids, too—part science experiment, part homegrown food source. And in a world where prices keep going up, free veggies on your windowsill are a small win worth celebrating.

Start with one veggie—green onions are a great beginner choice—and watch your kitchen scraps turn into kitchen stars.
